Durian Sambal
Durian Sambal is an old Sumatran side dish for enjoying with a variety of dishes. It combines the unusual flavour of the Durian fruit and spicy chillis.
Durian Sambal Ingredients
Cut the flesh off 3 ripe durian seeds and place into a sealed jar and store overnight. Blend 30 grams of red chillis. Add 4 sliced shallots and half a teaspoon of salt and mix with the fermented durian. Add one cup of boiled rice water. Steam the paste in a rice cooker until it is thick.
